This article introduces two ways to fry sunny-side-up eggs: the Taiwanese method of semi-deep-frying in hot oil over high heat, and the Japanese method of adding water and covering the pan to steam-fry. Japanese chef Papuchan explains the differences and recommends choosing a method to suit rice or toast for the best texture.
Facts
A survey found that nearly nine in ten people had previously known only the basic method of frying eggs in oil, which often leaves the whites hard or fully cooked.
Strictly speaking, the sunny-side-up eggs served at Taiwanese buffet restaurants are not traditionally pan-fried; they are made by semi-deep-frying in hot oil over high heat.
Japanese professional chef Papuchan discusses whether to add water when frying sunny-side-up eggs, noting that adding water or leaving it out can create very different flavors and textures.
Adding water creates steam under the lid to cook the egg, allowing the white to absorb moisture and become fluffy and soft.
Frying without water cooks the egg directly over the heat of the pan, giving the edges of the white a golden aroma and crispy texture.

Why do hotel double beds come with 4 pillows? The real purpose of 6 common items—most Taiwanese people have got it wrong
Published ・ Source Taiwan | 風傳媒
This article explains the real purpose of six common hotel-room items: multiple pillows help guests adjust their sleeping positions and protect their backs; tucking the duvet under the mattress serves as a signal and helps keep guests warm; white sheets make cleaning easier and offer psychological comfort; bed runners prevent stains; bedside lights are meant more to showcase a sense of quality than for reading; and slippers in certain regions are for hygiene and preventing slips.
Facts
Hotels almost always provide at least 4 pillows so guests can adjust them to suit their sleeping positions and reduce pressure on the neck and lower back.
Tucking the duvet tightly under the mattress signals to housekeeping staff that the bed has been used; even if the bedding has been moved slightly, they will change and remake it.
Hotels use white sheets because they can be washed with bleach to remove stains, and white creates a clean, comfortable impression.
The bed runner originated in U.S. accommodations. It was designed to let guests lie down without taking off their shoes while keeping the bed clean.
The spotlights above the bed are usually aimed at the pillows, making the bedding look more luxurious.
The dedicated slippers placed outside bathrooms in Japanese and Korean accommodations originated in Japan, where bathrooms were once commonly tiled, making the floor cold underfoot and easy to dirty.

Passengers who are unable to catch their scheduled train for any reason may, with assistance from station staff, take an available seat or a non-reserved seat on another train that day.
Early-bird ticket holders who switch to another train that day are no longer eligible for a discount and must proactively pay the full fare difference.
If an early-bird ticket holder does not proactively pay the fare difference and is checked onboard, Taiwan High Speed Rail will impose a penalty equal to 50% of the fare difference for the journey.
For refunds paid by credit card or Taiwan Pay (debit card), the money usually takes 7 to 15 business days to be returned to the original card account.
To maintain service quality, stations no longer accept requests for staff assistance to board an earlier train. Passengers who want to depart earlier must complete a ticket exchange through the regular process before entering the station.
